We need to worry about certain foods more than others. Any ready to eat foods that are moist and high in protein will encourage bacteria to grow if they get contaminated. The consumer will not do anything to these foods to make them safe to eat, so they are “High Risk” Foods.
Foods that are sold that the consumer will cook before eating are not considered high risk, even though they may contain bacteria, as the consumer will cook them to destroy the bacteria and make them safe. These are called “Low Risk Foods”.
Examples of High Risk Foods are Meat Sandwich, Cooked Chicken, Dressed Crab, Ham Salad and Smoked Salmon.
All foods sold in Fish and Chip Shops are ready to eat, and many of them are moist and high in protein so should be considered as “High Risk” foods.
